Polenta bacon and eggs

En Italie, on achète des paquets de polenta prête à l’emploi. Il suffit de couper des tranches, exactement comme on fait aujourd’hui.
Pour 6 personnes
Ingrédients : 300 g de polenta cuisson rapide, 12 rondelles de bacon ou tranches de lard fumé, 6 œufs, sel, poivre, matière grasse.
Préparation : 15 mn + repos polenta – cuisson : 10 mn – coût : * - difficulté : * - ustensile : film-plastique
Faites bouillir un peu plus d’un litre d’eau salée. Versez la polenta en pluie tout en remuant. Laissez épaissir pendant 2 ou 3 minutes et arrêter la cuisson. Disposez le film-plastique dans un plat creux et versez la polenta sur le film-plastique. Fermez en serrant bien, laissez refroidir et mettez au réfrigérateur quelques heures.
Faites griller les rondelles de bacon dans une poêle anti-adhésive. Réservez. Coupez la polenta en tranches d’1 cm d’épaisseur. Faites fondre un peu de matière grasse dans la poêle et faites-y dorer la polenta des deux côtés. Mettez de côté puis faites cuire les œufs au plat dans la même poêle.
Servez polenta, œuf et bacon en salant très légèrement et en poivrant selon votre goût.
