Pickles de chou rouge

Il est beau, mon bocal de chou rouge au vinaigre. Dans ma cave, sur la petite étagère, il trône fièrement, prêt à être dévoré.
Pour 5 ou 6 bocaux de 350 ml environ
Ingrédients : 1 chou rouge, du gros sel, 50 cl de vinaigre blanc, eau, graines de moutarde, graines de coriandre, poivre en grains et laurier.
Préparation : 20 min – cuisson : 15 min – coût : * - difficulté : * - ustensiles : bocaux
Faites bouillir une casserole d’eau. Enlevez les premières feuilles du chou et coupez le chou en très fines tranches. Plongez les lamelles de chou 2 minutes dans l’eau bouillante pour les « blanchir » et les ramollir un peu. Puis déposez-les dans une passoire et parsemez de gros sel entre chaque couche. Laissez dégorger pendant 1 journée.
Le lendemain faites bouillir 15 minutes les 50 cl de vinaigre et autant d’eau dans une casserole dans laquelle vous aurez déposé 1 cuillère à soupe rase de chacune de ces épices, coriandre, moutarde et poivre et aussi 3 feuilles de laurier. Rincez soigneusement le chou pour enlever toute trace de sel et répartissez-le dans des bocaux bien propres en tassant bien le chou. Versez le vinaigre bouillant et répartissez également un peu d’épices dans chaque bocal. Fermez les bocaux, retournez-les pour faire le vide d’air puis rangez-les et consommez-les au bout d’une petite semaine avec des charcuteries. Une fois ouvert, rangez le bocal au réfrigérateur.

Je voudrais tester votre recette de choux rouge au vinaigre. Mais vous ne précisez. Pas combien de temps on peut les conserver . Merci d'avance pour votre réponse

Oui, effectivement je ne l'ai pas précisé. A partir du moment où il y a du vinaigre, vous pouvez conserver les pots plusieurs semaines, voire 3 ou 4 mois. Mais dès que vous les ouvrez, il faut les conserver au réfrigérateur et consommer le chou très rapidement.
