Pintade en croûte façon Dordogne

Les mots manquent à la Cocotte pour décrire le goût unique de cette pintade cuite en croûte. La Cocotte se tait, la Cocotte ne dit plus rien.
Pour 6 personnes
Ingrédients : 1 belle pintade fermière, 500 g de farine, 20 g de levure de boulanger, thym séché, eau, ail, thym frais, sel et poivre, 1 cuillère à soupe de graisse d’oie.

Faites une pâte à pain avec la farine, 7 g de sel, la levure délayée dans une petite tasse d’eau, une belle pincée de thym séché et de l’eau. Formez une boule et laissez-la lever 1 h. Ensuite étalez-la sur le plan de travail, badigeonnez le dessus de la pâte d’une cuillère de graisse d’oie.
Préchauffez le four à 220°c. Farcissez la pintade avec deux gousses d’ail, du thym frais, sel et poivre.
Enveloppez la pintade dans la pâte à pain, côté badigeonné à la graisse d’oie collé à la pintade.
Scellez bien la pintade dans la pâte, déposez un bol d’eau dans le four puis enfournez la pintade en croûte d’abord pendant 15 minutes. Puis baissez la température à 200°c et laissez encore cuire 1 heure. Au bout de ce temps, arrêtez le four, entrouvrez la porte du four et laissez la pintade à l’intérieur encore 15 minutes. Servez pintade et pain avec une belle sauce brune. Une gravy anglaise, c’est parfait.
