Découvrez des saveurs iraniennes dans ce plat de riz qui prend la couleur des pistaches et de l'aneth.
Et plus vous mettrez de pistaches, meilleur ce sera !
Pour 6 personnes
Ingrédients : 400 g de riz basmati, 2 cuillères d'huile, quelques pistils de safran, 100 g de pistaches nature décortiquées, 1 petit bouquet d'aneth, sel et poivre

Faites tremper le riz basmati dans de l'eau froide pendant 1 heure. Changez souvent l'eau pour enlever un maximum d'amidon. Au bout de ce temps, faites bouillir une marmite d'eau et faites cuire le riz 5 mn. Égouttez le riz et faites chauffer l'huile dans la marmite, ajoutez un petit verre d'eau et le safran, faites bouillir puis versez le riz. Mélangez bien. Nettoyez l'aneth, débarrassez-vous des tiges et ciselez finement les feuilles. Ajoutez cette herbe à la marmite puis les pistaches décortiquées et hachées très grossièrement. Gardez-en un peu pour la décoration du plat. Salez et poivrez. Mélangez, versez un peu d'eau pour que le riz gonfle. Avec le manche d'une cuillère en bois, faites des gros trous à travers le riz pour faire passer la vapeur. Couvrez, baissez la température au minimum et laissez cuire pendant 30 mn. Servez en décorant votre riz de quelques éclats de pistaches.

Une recette qui me plaît ! moi qui suis toujours à la recherche de recette simple à cuisiner pour les soirs de semaine, c'est parfait !
